The Swaby Monolith

Introduction

Brought to light in January 1951, its origins are unknown; the Swaby Monolith is now quietly residing and retiring hidden in a chalk stream valley in the Lincolnshire Wolds.

Carved and incised with enigmatic symbols and designs it is thought to celebrate a renowned and inspirational leader, who appeared to have a Horde of followers.

Unusually, the monolith is partially rendered – legend has it that the master mason ran out of icing sugar before the task could be completed!

Ingredients

12oz mixed dried fruit

8oz self-raising flour

Half a teaspoon of ground mixed spice

Half a teaspoon of cinnamon

One egg

8 fl oz cold tea

4oz Demerara sugar

Grated rind of half a lemon

Grated rind of half an orange

Method

Cake:

1. Mix dried fruit with sugar and cold tea.

2. Soak overnight.

3. Next day stir in grated rind of lemon and orange.

4. Add one beaten egg.

5. Stir in flour sieved with mixed spice and cinnamon

6. Bake in lined 2lb loaf tin at 160° (150° fan) Gas mark 2-3 for one and a quarter or one and a half hours.

7. Test with skewer

Freezes well

Icing:

4oz sieved icing sugar

1tbsp warm water

Place icing sugar in basin, add water

Stir until smooth.
